Unlined copper is the traditional material for making confectionery. During such procedures, temperature must be diligently controlled and maintained. That’s why solid copper is used. Also, as sugar breaks down, its components have the ability to block reactive copper ions, meaning that it is safe to use unlined copper when making sweets and sugar syrups.
