Mauviel has made it possible to have copper cookware in the induction kitchen with the M’6S range.
M’6S has a stainless-steel interior with three layers of internal aluminium for even conductivity and a copper exterior with a magnetic steel base to make it perfect for the induction cooktop.
This wide, somewhat shallow pan is like a cocotte/stewpan but not nearly as deep. It is incredibly versatile, lending itself to searing, braising, oven-roasting, frying, poaching, pan-roasting, but shallow enough that it can evaporate to make a cooking liquid more intensely flavoured.
